Nutritious immune boosting soup recipe:
One raw ingredient soup pack provides nutritious vegetable ingredients that feeds 100+cups/bowls of soup 250ml+ each.
INGREDIENTS
- 8x stock cubes
- 100ml crushed garlic, ginger and dhanya *optional
- 2x soup packet/ curry paste
- 1.5kg Onions
- 3.5kg Baby potatoes
- 2.0kg Sweet potatoes
- 2.5kg Carrots
- 1.8kg Butternut
- 2.0kg Noodles
- *Optional
- Add celery and spices to taste
- Add protein of choice
- Chop onions, heat pot to medium high, add a dash of oil, fry onions & add 100 ml crushed garlic, ginger and dhania (coriander), turn down to simmer
- *optional – add flour to thicken mixture
- Dissolve stock block and soup mix into a litre of cold water
- Stir until smooth over medium to high heat
- Add to sautéed onions and add 20 litres of water
- Chop carrots, sweet potatoes, baby potatoes (leave skin on) and butternut into small chunks
- *Optional add protein (chicken chunks/necks or soup bones)
- Add to water and bring to boil
- When vegetables have cooked well and are soft add noodles
- Cook until soft, (+-4 minutes)
- Mix well, add any additional spices to taste
- Serve in 250ml cups for a nutritious and filling soup
Benefits of Garlic and Ginger:
One clove of Garlic gives fibre, calcium, copper, potassium, phosphorus, iron and vitamin B1, and together with ginger and onions is excellent for promoting a healthy gut and immunity.
